Pumpkin is perfectly suited to both sweet and savoury dishes.
Most of us have our typical ways we use this delicious vegetable, so here are a couple of new ways you can incorporate this into your diet.
You are encouraged to take both of these recipes and make them your own!
Trying different pumpkin varieties, subbing ingredients to add extra nutrition and flavour, and trying different sauces or toppings is highly recommended.
Ingredients:
- 500g shredded pumpkin, any variety
- 1 tbsp castor sugar
- 1/2 tsp salt
- 1 clove garlic, minced
- 2 tbsp shallots, chopped
- 1/4 cup water (only if needed, see notes)
- 2/3 cup all purpose flour, gf or regular
- oil for pan frying - any heat tolerant oil will do
Directions:
- Mix shredded pumpkin, castor sugar, salt, and garlic in a bowl. Let rest for 15 minutes. As is rests, some liquid should be drawn out of the pumpkin. If there’s not much there after 15 minutes, add water.
- Add flour and stir until combined.
- Heat 1 tsp oil in pan over medium heat, add a small scoop of the pumpkin mixture and spread out into a small disc. Flip and cook until both sides are golden.
- These fritters are delicious served with an asian inspired dipping sauce. Think soy, sesame oil, chilli and ginger!
Ingredients:
- 225g unsalted butter, room temp
- 1 cup coconut sugar, packed
- 1 large egg, room temp
- 1 tsp vanilla extract
- 1 cup butternut pumpkin puree
- 2 ¼ cups all-purpose flour, gf or regular
- 1 tsp baking powder
- ½ tsp salt
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- ¼ tsp ground nutmeg
- ⅛ tsp ground cloves
- 1 ½ cups chocolate chunks or chips
Directions:
- Preheat the oven to 180°C and line a 9" x 13" pan with parchment paper.
- In a large bowl, cream the butter and brown sugar until fluffy, about 2 mins.
- Add the egg, vanilla, and the pumpkin puree and mix to combine.
- In a medium bowl, combine the flour, baking powder, salt, cinnamon, ginger, nutmeg, and cloves. Add chocolate, reserving some for the top if desired. Add to the butter mixture and mix until just incorporated.
- Transfer the batter to the prepared pan and spread evenly. Add extra chocolate on top if desired. Bake for 22 to 25 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes, cut into slices, then indulge!
