We absolutely LOVE delivering fresh organic fruit & veg to you each week, but it's easy to get stuck making the same things over and over again... So let's switch it up!
If you've got a heap of carrots in your house that you just don't know what do to with, give these recipes a try.
Ingredients:
- 1 cup shredded coconut, unsweetened
- 1/2 cup grated raw carrots
- 6 medjool dates, pitted
- 3/4 cup almonds and/or walnuts
- 1/4 cup hemp or sunflower seeds
- 1/4 cup honey or maple syrup
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ground ginger
- pinch ground turmeric
- 1/4 tsp ground cloves
Directions:
- Reserve about 1/4 cup coconut for rolling.
- Put all remaining ingredients into your food processor and blend at high speed until the mixture is broken down and sticking together when pressed.
- Use your hands to shape the mixture into balls.
- If the mixture is too wet, add some more coconut or almond meal to help bring it together.
- Roll the balls through the extra coconut if desired.
- Place in the fridge to set.
Ingredients:
CARROTS
- 2 cloves garlic
- 8 medium carrots, cut into chunks
- 1 Tbsp olive oil
- 1/2 tsp cumin
- pinch salt & pepper
HUMMUS
- 1 cup chickpeas, drained
- 1 Tbsp tahini
- 2 Tbsp olive oil
- juice of 1 lemon
- 2 Tbsp water
- pinch salt & pepper
Directions:
- Preheat oven to 200 C.
- Toss carrots with oil and seasonings, roast for 20-30 mins until tender. Allow to cool for a few minutes.
- Add roasted carrots and all ingredients of hummus to food processor. Process until smooth.
- Add more or less water as needed to reach desired consistency. Season to your taste.
- Garnish if you like! Some suggestions include a drizzle of olive oil, paprika, or toasted pepitas.
