We absolutely LOVE delivering fresh organic fruit & veg to you each week, but it's easy to get stuck making the same things over and over again... So let's switch it up!
Citrus fruit is at it's prime in the colder months here in Queensland, and even though it might be second nature to reach for an orange as a snack, why not try cooking with these beauties?!
Oranges are as versatile as they are tasty, plus you can have fun experimenting with navel oranges, blood oranges, and even mandarins or tangelos in these recipes.
Roll up your sleeves and give it a try!
Ingredients:
- Approx 650g pumpkin (butternut is best)
- 2 Tbsp olive or coconut oil
- 1 medium onion
- 3 garlic cloves
- piece of fresh ginger, to taste
- piece of fresh turmeric, to taste
- 3 cups broth/stock
- 1 cup orange juice
- 1/4 cup cream or coconut cream
- pinch salt & pepper
Directions:
- Peel and cut pumpkin into cubes
- Finely chop the onion, garlic, ginger and turmeric
- Heat the oil in a soup pot on medium heat and gently cook onion, garlic, ginger & turmeric, approx 5 mins
- Add the pumpkin and cook for approx 5 mins
- Add the broth and orange juice, simmer on low heat for about 30 mins
- Add the cream or coconut cream
- Using a stick blender, blend until smooth
- Season and garnish to your liking. Some suggestions include sliced shallots, parsley, or fresh orange zest!
Ingredients:
CRUST

1 1/4 cup almonds

3 medjool dates, pitted

pinch of salt

up to 1 Tbsp water, if needed to help it come together
FILLING
- 2 1/4 cups raw cashews
- 1/4 cup maple syrup
- 3 Tbsp orange zest
- 1/3 cup orange juice
- 2 tsp vanilla
- pinch turmeric + pinch salt
- 1/2 cup coconut oil, melted
Directions:
- Soak the cashews overnight
- Add crust ingredients to food processor. Blend until it becomes sticky and crumbly
- Press into parchment-lined 7" springform pan
- Drain and rinse cashews. Add to food processor, and blend until smooth
- Add all other ingredients and blend well. Add more maple syrup or orange zest as desired
- Pour over the crust and smooth with spatula
- Garnish with fresh orange slices if you like! Cover and let sit in the fridge overnight or until set
